yogurt cake

Hello Supermama’ ! So today we’re traveling…

No, you don’t need your passport 😉 !

We are time-traveling.

Back to my childhood memories to share with you how this yogurt cake recipe became a staple in my family.

So my mom had this friend that would come visit us every now and then.

And every time she came by the house, I would always be greeted with the smell of this cake.

This is how this French cake recipe became one of my favorites.

The only regret I have, is that I’ve never asked her about “the special ingredient”…

Her cake had always a little something that I am still trying to get my head around.

Who knows she probably had a traditional wood oven?

Fast forward to today, this recipe has become a quick fix that we always go back to in our home.

The great thing about it is that you can have a slice with a warm beverage in the morning for breakfast, at 4 pm when you need a snack, or even as a treat to celebrate how awesome you are.

I really love baking this cake because:

It is very easy to make and I bet your kids will love being a part of the creative process.

It takes very little time to make and you can do something else while it’s baking.

This cake is a win-win-win situation. It allows you to save time from cooking breakfast, to save money as the ingredients are very cheap and you probably already have them in your fridge or pantry.

And also because it will comfort you even during your roughest days.

Alright, enough talking, on to the recipe.

3/4 teaspoon of baking powder

1 cup of yogurt (use the empty cup of yogurt to measure the oil, sugar and flour)

3/4 cup of canola oil

1 3/4 cup of sugar

3 cups of flour

2 large eggs

1 .  Heat the oven to 225°F (*)

2 .  Whisk together all the ingredients cited below by incorporating them one at the time to avoid lumps.

3 . Yogurt

4.  Baking powder

5 . Oil

6. Sugar

7 . Flour

8 . Eggs

9 . Grease a 9 inch loaf pan with either butter or a baking spray.

10 . Pour the batter into the pan and bake for 50 to 60 minutes.

I recommend using the vanilla yogurt from Dannon, I find it to be the best.

(*) Most yogurt cake recipes online suggest that you heat the oven to 350°F and let the batter bake for an hour or so. But every time I do so, my cake always burns on the outside while the inside isn’t baked yet. I suggest you to heat your oven to 295°F for 70 minutes.

To check if it is well baked, dip a knife or tester in the yogurt cake. If it come out clean, you’re good to go.

Once the cake is ready, let it cool off and it can be served warm or at room temperature.

You can enjoy this yogurt cake for several days when well-wrapped with foil.

Alright my friend, I have to go

There’s a slice calling my name in the corner 😉
